Apple and Cinnamon Cupcakes

Ingredients

60 grams Oliveira da Serra Extra Virgin Green Olive Oil

1 egg

100 g sugar

150 g plain yogurt

½ teaspoon vanilla extract

2 cups self-rising flour

Salt to taste

1½ teaspoons baking powder

Cupcake Filling

4 red apples

1 tablespoon sugar

2 teaspoons cinnamon, to taste

1 teaspoon cornstarch

1 teaspoon vanilla extract

Cupcake Meringue

- ½ cup unsalted butter, at room temperature

- 2 cups of powdered sugar

- 1 teaspoon cinnamon

- 3 teaspoons milk

- 2 teaspoons vanilla extract

Cooking Mode

  1. Start by preheating the oven to 180ºC. 
  2. In a bowl, beat the egg with the sugar. Add the plain yogurt, olive oil, and vanilla extract. Beat again and set aside. 
  3. In another bowl, combine the all-purpose flour, salt, and baking powder, and mix well. Add this mixture to the previous mixture and fold in gently. 
  4. Fill each cup of a cupcake pan with the batter and bake for 20 minutes.
  5. Meanwhile, prepare the cupcake filling. Cut the apples into cubes and place them in a saucepan over low heat; add a little water and all the remaining ingredients. Cook until the apples are tender. 
  6. Remove the cupcakes from the oven and place them on a cooling rack to cool. Once cooled, make a hole in each cupcake, but not too deep. Fill the cupcakes with the apple filling mixture. 
  7. For the meringue: Using an electric mixer, beat the butter for 1 minute. Add the sugar, cinnamon, vanilla, and milk, and beat for 3–4 minutes or until you have a light, fluffy cream. 
  8. Transfer the meringue to a pastry bag fitted with a star tip. Pipe the meringue onto the cooled cupcakes and decorate with the remaining filling.
