Ingredients

2 tablespoons of melted and cooled coconut oil

1 ripe banana, mashed

¼ cup brown sugar

1 egg

1 teaspoon vanilla extract

1¼ cups fine almond flour

¼ cup coconut flour

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

Topping

½ cup powdered sugar

2 tablespoons cream cheese

2 tablespoons butter

½ teaspoon vanilla extract

½ teaspoon almond milk

Chopped walnuts, to taste

Cooking Mode

  1. Preheat the oven to 180ºC.
  2. Start by combining the coconut oil, mashed banana, sugar, egg, and vanilla extract; mix until smooth. Next, add the almond flour, coconut flour, baking soda, cinnamon, and salt; mix until a soft dough forms. Place the dough in the refrigerator for 5 minutes.
  3. Remove the dough from the refrigerator and shape it into small balls, placing them on a baking sheet lined with parchment paper. Use the palm of your hand to flatten each ball into a cookie. Be careful not to make the dough too thin.
  4. Bake for 9 to 12 minutes. Remove from the oven and let cool on the baking sheet.
  5. Meanwhile, prepare the topping. Beat the sugar, cheese, butter, and vanilla extract until creamy. If the mixture is too thick or lumpy, add a little milk.
  6. Top each cookie with the cream and sprinkle with walnuts. Serve!
