1 teaspoon fennel
200g flour

Grease the pan thoroughly and place it in the refrigerator.
Preheat the oven to 180°C.
Separate the egg yolks from the whites and beat the yolks with the Oliveira da Serra Virgin Olive Oil, honey, sugar, cinnamon, and fennel until the mixture is very thick.
Add the previously sifted flour and mix well without beating.
In a separate bowl, beat the egg whites with a few grains of salt until soft peaks form, but no further.
Gently fold the egg whites into the previous mixture using a folding motion from top to bottom, taking care not to deflate the whites.
Pour the batter into the pan and bake for about 40 to 45 minutes.
Let the cake rest in the pan for 5 minutes, then remove it from the pan.
