Frozen Seafood Rice

Ingredients

4 tablespoons of Ouro Extra Virgin Olive Oil

1 package of frozen seafood mix

2 cloves garlic, minced

1/2 red bell pepper, diced

1 bay leaf

250 g Carolino rice

50 g tomato paste

150 g tomato pulp

100 ml white wine

Chopped cilantro to taste

Salt to taste

Cooking Mode

  1. Start by thawing the seafood mix.
  2. In a saucepan, combine the olive oil, minced garlic, diced bell pepper, bay leaf, tomato pulp, salt, and white wine. Let it simmer for about 10 minutes over low heat. 
  3. Add the seafood mixture to the sautéed ingredients, let it cook in the sauce for about 5–7 minutes, stirring constantly! Strain the seafood, reserving the sauce, and set the seafood aside. 
  4.  Return the sauce to the pot, add the tomato paste, and place it back over low heat. As soon as it comes to a boil, add the rice. Let the rice cook a bit with the sauce, stirring constantly to prevent it from sticking. Next, add a little water and let the rice cook. 
  5. Once the rice is cooked, add the seafood and stir well. Remove from the heat and add the chopped cilantro. Your rice with frozen seafood is ready, but let the rice rest a bit before serving!
