Apple Bars with Peanut Butter and Caramel

Ingredients

Base

115g melted unsalted butter

50 g sugar

1 teaspoon vanilla extract

¼ teaspoon salt

125 g all-purpose flour

Apple Filling

2 large apples

2 tablespoons all-purpose flour

2 tablespoons sugar

1 teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

Crust

60g Oliveira da Serra Extra Virgin Mature Olive Oil

43g old-fashioned rolled oats

70g brown sugar

¼ teaspoon ground cinnamon

31 g all-purpose flour

liquid caramel, to taste

peanut butter, to taste

Cooking Mode

  1. Preheat the oven to 150ºC.
  2. Make the crust: mix the melted butter, sugar, vanilla, and salt in a bowl. Add the flour and mix all the ingredients together.
  3. On a baking sheet lined with parchment paper, spread the mixture evenly and bake for 15 minutes, then remove from the oven.
  4. Meanwhile, prepare the apple filling: Peel the apples and cut them into thin slices. Mix the apples, flour, brown sugar, cinnamon, and nutmeg in a bowl until all the apples are coated.
  5. Set aside.

For the crust:

  1. Mix the oats, brown sugar, cinnamon, and flour. Add the olive oil and mix well. Set aside.
  2. Spread the filling over the base. Next, top the filling layer with a layer of crumb topping. Bake for about 30–35 minutes.
  3. Remove from the oven and let cool for at least 20 minutes, then refrigerate for about 2 hours
  4. Remove the dessert from the baking sheet and cut into bars. Drizzle each bar with a little caramel and peanut butter.
